The ground reality of bread is the dough itself: flour, water, temperature, time, and the changing structure beneath the baker’s hands. An earlier note described folding an 80% hydration ciabatta dough, where resistance and trapped air were immediate sensory evidence of what the process had produced.
That evidence is useful when it is connected to observation. A fold changes the dough’s organization; rest allows it to relax; fermentation continues. The baker can record the schedule, feel the strength develop, and compare the baked result. Attention does not replace measurement; it gives measurements their context.
The original piece appeared in a newsletter format. This edition preserves its central subject—the material reality of working dough—as an archive article. The current ciabatta formula and method provide the published process.
