Toasting is a serving choice, not evidence that one bread is universally better than another. The comparison depends on the loaves and use.

Poolish and sourdough are different methods

A poolish is a flour-and-water preferment leavened with baker’s yeast. Sourdough uses a maintained culture of yeasts and lactic-acid bacteria. Both methods involve fermentation, but their ingredients, organisms, acidity, timing, and handling can differ. A baker may use either in a ciabatta formula; the name of the bread does not identify the method by itself.

There is no general basis here for ranking ciabatta and sourdough as healthier, easier to digest, or better for a particular person. Two parallel randomized studies in people with self-reported non-coeliac wheat sensitivity did not find group-level symptom differences among the tested wheat species within either fermentation study. They were not a direct yeast-versus-sourdough comparison. The tested breads and participants do not represent every bread or individual response.

Compare the process

For a useful baking comparison, record the flour, preferment or starter, inoculation, fermentation time and temperature, dough strength, shaping, and bake. Keep those process notes separate from nutrition or health claims.
